• Type: Amontillado Sherry — a style of fortified wine from the Sherry region (Jerez-Xérès-Sherry), Spain. 

• Grapes: 100% Palomino Fino. 

• Aging / Production: It spends part of its life under “flor” yeast (like a Fino) and then later undergoes oxidative aging (exposed to oxygen), following the traditional “solera” system. 

• Approximate Age: The average (solera) age is around 12 years. 

• Alcohol Content (ABV): ~ 16.5%. 

• Profile: Because of its dual aging (biological under flor + oxidative), it sits between a light Fino and a heavier Oloroso — combining freshness with nutty, oxidized depth. 

Tasting Note

• Nose / Aromas — Mild / delicate almond or hazelnut, a light salty / sea-breeze / brine note (a hallmark of Sherry), possibly faint yeast-oriented aroma leftover from the “flor” stage, plus subtle oak and dry citrus/stone-fruit hints. 

• Palate / Taste — Dry and elegant rather than sweet. Think: toasted nuts (almond, walnut), dried-fruit or slight stone-fruit echoes, dried orange peel or light citrus zest, mineral / saline / chalky undertones, and a bit of oak-driven dryness or bitterness on the finish. 

• Finish & Body — Light to medium body, crisp acidity, a somewhat saline finish with a touch of bitterness and dryness — refreshing rather than heavy.
